I. Physical-chemical parameters :

- Overall acidity ( w. % ) converted to apple acid at pH 8,1 – not less than 2,5
- Clarity:
- NTU ** - no more than 5,0

- Pectins / Starch – not present / not present
* - on clients demand other product with different refractometric extract is acceptable,

• II. Organoleptic parameters:
- Purity, clarity – pure without any impurities, clear,
- Colour – typical for a juice from fruits used, gold-amber in shades,
- Taste and aroma – characteristic and typical for apple juice.
• III. Microbial parameters :
- Mesophilic aerobic bacteria ( cfu / ml ) – less than 1000,
- Yeast ( cfu/ ml ) – less than 300,
- Moulds ( cfu/ ml ) – less than 100,
- Bacteria of Coli group ( cfu/ ml ) – not present
